- Do you cook on site, or drop off trays?

Taco truck vs. taco cart vs. taquiza
A truck parks and serves from the window, needs street or lot access, and often has a minimum spend. A cart (carrito) sets up in your yard with a grill or trompo and a taquero cooking in front of guests. A taquiza is the general term for party taco service; many taquizas are a cook with a grill and a table, and are the most common choice for home parties.
